RECIPE | Alokozay Tea - Cinnamon tea infused panna cotta

Matcha tea has been a long time favourite when making any type of dessert and now more recently, it's expanded to other teas such as Chai or Early Grey. We decided to try making a panna cotta using cinnamon tea from Alokozay Tea.  


If you're looking to buy it in a store, try the international food section in Metro, Bulk Barn, Food Basics, or Adonis. If all else fails, do what we did and order it directly from their website. Panna Cotta is a pretty straight forward dessert to make but it never fails to impress at dinner parties where you can serve them in individual ramekins.


Ingredients
- 2 Alokozay cinnamon tea bags
- 3/4 cup half and half cream
-1/2 cup 2% milk
- 2 tbsp sugar
- 1 tsp gelatin
-fruits of your choice 

Method:

1. Mix the gelatin with the milk and let sit for 5-10 minutes in a saucepan.
2. Put on low - medium heat and slowly heat up the milk without allowing it to boil
3. Add in half and half cream, sugar and heat without boiling
4. Add in  two Alokozay tea bags and let it steep (this will give the liquid a little bit of colour) Make sure to press the tea bags to ensure it's steeping probably. 


5. While the tea bag is steeping on the stove, prepare a bowl with cold water 
6. Once the tea is done steeping, around 4-5 minutes transfer the liquid to a metal bowl and place it in the cold water for 10 minutes. 


7. Pour the cold liquid mixture into rameskins or dessert bowl of your choice. 


8. Cover with saran wrap and let it sit in the fridge until it sets, approx 5-7 hours

9. When the panna cotta has set, add fruit of your choice on top with a little chocolate drizzle and serve! 

 Infusing the panna cotta with the cinnamon gave it a really aromatic scent to the dessert and the hint of cinnamon went really well with the fresh strawberries!
